Jane's Mashed Potato Casserole

3 lb potatoes, about 12 medium
8 oz cream cheese
1/4 c butter
1/2 c sour cream
1/2 c milk
2 eggs, lightly beaten
1/4 c chopped onion
1 tsp salt
dash pepper

Mash potatoes.  Add cream cheese & butter.  Beat until melted together.  Mix in sour cream.  Add eggs & onions to milk.  Beat lightly.  Add salt & pepper.  Beat until light and fluffy.

Use 9-inch greased round casserole.  Refrigerate several hours or overnight.
Bake at 350 for 45 minutes.
Serves 8-12
